Barbecued Chicken Thighs Marinated With Tequila

Ingredients (for six people):

  • A teaspoon and a half of ground cumin
  • One teaspoon of chili powder
  • A pinch of fat salt
  • A pinch of chipotle
  • Six boneless chicken thighs
  • 125 ml pineapple juice
  • 150 ml of tequila
  • Two teaspoons cornstarch
  • Two teaspoons lemon zest
  • Three tablespoons lemon juice
  • Ground pepper
  • honey

Method of preparation:

First, we preheat the grill over medium-high heat with the burners on both sides of the barbecue. Next, we mix the first four ingredients in a bowl and batter the chicken with the resulting mixture. In a separate pot, mix the honey, tequila and pineapple juice and bring them to a boil for about ten minutes.

In another separate bowl, mix the cornstarch with two teaspoons of water and add this mixture to which we have boiled and again let it boil again while stirring with a few rods. After a couple of minutes, we add the lemon zest, the lemon juice, and the ground pepper.

We cook the grilled chicken for five minutes on each side, sprinkling occasionally with the mixture we have prepared. Thus, we turn the thighs every five minutes, adding our juice until they are well done. A novel and very juicy way of eating chicken. Dare to try it!
