Grilled Goat Cheese Skewers

Ingredients (for six people):

  • Half cup of balsamic vinegar
  • A dash of olive oil
  • Two cloves garlic, thinly sliced
  • About five slices of bread
  • Mozzarella cheese (about 20 small pieces)
  • 24 cherry tomatoes
  • Basil
  • Salt and ground black pepper

Method of preparation:

First, we put the balsamic vinegar in a pot and bring it to a boil until it reduces approximately half its volume. When we have done it, cover and keep warm. In a separate pot, place the olive oil and sauté the garlic over low heat until the oil has impregnated its flavor. When ready, remove from heat, set aside the garlic and spread the bread pieces with the oil.

Once we have it, we assemble the skewers that will include the slice of bread, a cube of goat cheese, cherry tomato, and a basil leaf. We will repeat this sequence until we finish the skewer. Then, we will add a splash of olive oil on each of them, a pinch of salt and black pepper. Finally, we put on the grill for about four minutes, changing sides about every 30 seconds.
